It is easily substantiated that the Versalab Grinder and PRESS provide the freshest, finest espresso flavor available anywhere. But there are many other reasons to use these products in your shop.
1. Consistency. Shot after shot the same. All the taste advantages of the Versalab grinder with regard to lack of heated grounds, no mass of residual grounds, no stale grounds, no clumped grounds, plus a very consistent volumetric dose from the dosing hopper, make for unmatched shot to shot consistency. Add the portafilter holder to leave the barista free to do other tasks. Add the extremely consistent pressing (tamping) of the grounds in the filter basket. Better flavor - that gains customers from your competitors - and less thrown out coffee, saving time and money.
2. Speed. Using two Versalab grinders and one Versalab PRESS, a single barista can easily prepare 2 drinks every 70 to 76 seconds, the equivalent of one drink every 35-38 seconds, and this with a 30 second pour time. The long (but required for maximum flavor) tasty grind time disappears with the overlap of the two machines and the speed of the PRESS.
3. Simplicity. Simple robust equipment to use and adjust.
4. Reliability and ease of maintenance. All parts of these products are extremely robust, of machine tool or instrument quality. With over four years of selling the grinder and PRESS, we are quite certain of their reliability. Keeping the machines clean and changing the flat burrs every 400 pounds of coffee is basically it.
5. Cost. You need two grinders anyway. Put two dosing hoppers on each of the two Versalab grinders and have one on each be decaf.
6. Employee health. It is finally being recognized that repetitive stress injuries are a serious problem for baristas. We have anecdotal evidence, and it is rather easy to understand, that the use of the PRESS, as well as the lack of dosers on the grinders, has eliminated this problem for our customers.
7. Easy training. Forget teaching how to repetitively tamp coffee to 35 pounds force.

Note that without rushing, Laura (not our Laura) makes ~ 4 1/2 drinks in under 3 minutes.
