The
M3 Espresso Machine was created to be the optimal espresso extraction
device. In order to accomplish this two basic goals had to be
achieved.
Firstly it needed very precise
control over all brew parameters. The controls of the M3 allow
the user to experiment with and regulate every aspect of the
brewing
process - adjusting for the optimum parameters for any roast:
water temperature to .1ºF, brew pressure to around .02 bar, pre-infuse
time and flow, and overall brew time. Now you can evaluate the
effect of each of these parameters in detail - and our experience
indicates that each of these parameters counts in great detail.
Secondly, it needed to completely avoid off flavors from its own
internals. There
is no 3-way valve, thus eliminating the build-up of residues and
off flavors. Off-tastes due to poor metal choices, dirty tubing,
unstable temperatures, and inaccurate brew parameters have all
been eliminated.
The machine provides complete transparency of blend and roast.

This
is not an “improved” version of available technology.
Rather, the question was asked “What is needed to
make an excellent cup of espresso” and the design
answers grew out of that question. This makes the M3 espresso
machine an invaluable technical tool for cupping, roasting,
and the accurate understanding – and then also the
enjoyment – of espresso.

The
Versalab Grinder eliminates the disaster of residual grounds and
burned tasting espresso.
Other
commercial grinders seriously hurt the flavor of the
coffee by adding a proportion of the multiple previous grindings
and overheating the grounds through aggressive burrs running at
too high a speed. The Versalab Grinder grinds one dose at a time,
with no place in the grinding pathway for grounds to accumulate.
The burr set provides a gentle long path through grinding resulting
in the fluffiest non-stale/non-oily grounds possible. Beans into
the top funnel, through the burr set (68 mm conical/flat), and
grounds out the bottom funnel. No off-flavors from oxidation,
no “bad bean” residuals, no residuals from the previous
roast flavor to confuse the present cupping. The grinder produces
almost no heat and is very quiet, ideal for use in cupping labs
and private residences.

PRESS is water or air driven through a regulated supply
to give
extremely repeatable results. The desired pressure is set by
the user.
Set the filled portafilter on the ball bearing mounted press
rest and flip the switch. The piston will compress the grounds
to
whatever pressure has been set. Move the portafilter handle
from side to side to polish the puck.

We
have identified a lot of the flavor problems associated with conventional
espresso machines and have essentially eliminated them. The result is
an espresso of exceptional quality - we firmly believe it to be unequalled.
Most machines flavor the water through two sources, nasty tasting metals
in the incoming water path, and residual coffee flavors also in the
incoming water path. Eliminated in the M3.
We control the water temperature very well. We see no signs that other
machines take a bunch of temperature issues into account – regardless
of claims. The water in the M3 never leaves a consistent temperature
environment until it exits the coffee.
Pre-infuse is adjustable in time and ramping rate.
Brewing pressure is fully adjustable.
Yes you can easily taste the difference in a few tenths of a Bar (or
less) variation in brew pressure or less than .5 degree water temperature
variation.
All the key features of the M3 are the subject of a patent application.
